Eggplant
A veggie known for its unique shapes and huges of purple, greens and white, the eggplantis a member of the nightshades and a delicious addition to your kitchen.
Storage
Eggplant will last longer stored at room temp or in a cool basement. Storing in the fridge will damage the texture and flavor. Store away from bananas, tomatoes and melons unless you want to further ripen the eggplant (all of which when ripe produce ethylene).
