At Bibb Forest Farm, our sheep play an important role in our multi-species, holistic grazing program. Our lambs graze in a flerd (flock and herd) along with cattle and our milking goats. We raise katahdin sheep and they tend to browse similarly to our milking goats preferring different forage than the cattle. They never receive antibiotics, artificial growth hormones or steroids. A stress-free lifestyle produces lamb that is distinctively clean tasting, mild, tender, and not at all gamey.

Cooking & Serving
Cooking Methods: Roast, Braise, Reverse Sear, Barbecue, Smoke
Cooking Tips: BFF lamb pairs well with any manner of seasoning from simple compound herb butter to more assertive flavors like red wine or even curry. Boneless lamb shoulder makes an excellent roast – season generously with a paste of your favorite herbs and aromatics and slow-roast to medium-rare. A quick blast of high heat will crisp the exterior. Lamb shoulder is also wonderful when braised or barbecued.
