📣 Farm Update: A Short Pause in Market Production :

Store Closed

Bibb Forest Farm is taking a brief break from producing veggies for market and regular deliveries as we reassess our scale and costs. At this time, market expenses — especially labor relative to the cost of living — no longer align with what we’re able to sell our vegetables for, and we want to make sustainable decisions for the farm long term.

During this pause, we are still offering whole lambs, with the first available lambs ready in April. We also have one half cow available in early February, with additional half cows available mid–late summer.

If you’re interested in reserving any of these, please reach out directly to arrange details.

Description

Regeneratively raised lamb offered at a lower total cost for customers focused on value, versatility, and whole-animal use.

What Is a Cull Lamb?

Cull lambs are healthy animals that do not meet our finishing or breeding standards due to size, age, or conformation.

They are raised in the same regenerative grazing system as our finished lambs, but offered at a discounted price to reflect lower finish uniformity — not lower care or management.

Cull Lamb – At a Glance

  • Hanging weight: 20–50 lbs

  • Price: $7.50 per lb (hanging weight)

  • Estimated total: $150–$375

  • Deposit: $150 (non-refundable)

  • Processing: ~$150 (paid directly to the butcher)

  • Delivery to butcher: Included

  • Take-home meat: ~15–35 lbs

  • Freezer space needed: 1–2 cubic feet

What to Expect (Please Read)

Cull lambs may have:

  • Fewer or smaller chops

  • Smaller roasts

  • Less uniform cuts

  • A higher proportion of ground meat

Cull lambs still receive:

  • The same pasture-based care

  • The same regenerative grazing

  • The same low-stress handling

This option prioritizes value and utilization, not presentation.

Cuts You’ll Receive (Basic Cuts Only)

Your lamb will be processed into basic, straightforward cuts, including:

chops, loin, roasts, steaks, ground lamb

Notes:

  • Cut quantities vary by animal size

  • Cuts follow standard butcher practices

  • Specialty or highly customized cuts may not be available

Processing, Delivery & Pickup

  • We deliver the live animal directly to the butcher

  • Processing is paid separately by the customer

  • Typical processing cost: ~$150

Packaged Meat Pickup

  • Pickup of packaged meat is the customer’s responsibility

  • Meat must be picked up promptly once the butcher notifies you

  • Delayed pickup may result in additional storage or holding fees charged by the processor

How Pricing Works

  • Final price is based on actual hanging weight

  • Hanging weight is confirmed by the butcher

  • Deposit is applied to the final balance

  • Remaining balance is due prior to or at processing

  • Processing fees are paid directly to the butcher

Is This Right for You?

Good fit if you:

  • Want a lower-cost whole lamb

  • Plan to use ground meat, stew, or sausage

  • Are comfortable with variable cut sizes

  • Have freezer space available

Not a good fit if you:

  • Want premium chops and uniform presentation

  • Expect a finished-market animal
