A large-headed cabbage, similar to bok choy, Chinese cabbage is actually packed with more nutrients than most Western cabbages.
Remove any wilted or damaged leaves and store in a plastic bag in the fridge.
Some uses include raw in salads, cooked in soups, or roasted with a little salt and lemon. Can also be used to make sauerkraut.
