A perennial form of leaf chicory, radicchio is well known in Italian kitchens. It has a bitter and spicy taste which mellows if grilled or roasted.
Store Radicchio in the crisper for 2-3 days or break leaves and store in a plastic bag with a papel towel to extend life.
It is usually eaten grilled with olive oil or mixed with dishes such as a risotto. The root may also be used as a coffee substitute.
